For the pear-ginger jam, peel and core the pears and cut into large pieces. Peel the ginger and grate finely. Wash the lemon, grate the peel and squeeze the juice.

Wash and boil jam jars and lids. Puree pear pieces, ginger, lemon zest and juice, and preserving sugar in a saucepan with a blender and cook for 5 minutes.

Pour a few drops of pear brandy into each jar and lid. Pour jam into jars as hot as possible and seal immediately.
