For the pear Helene with shot, peel the pears, cut them in half and remove the core. In a slightly shallower pan, heat water, sugar and lemon juice, put in the halved pears and steam until soft in five to ten minutes (depending on the type of pear). Then take them out and let them drain.

Mix sauce powder with a little milk and sugar until smooth. Bring the rest of the milk to the boil. Add sauce powder and crumbled chocolate. Bring to a boil while stirring. Fold in rum.

Arrange pears and ice cream on nice dessert plates and pour hot chocolate over them just before serving.
