For the pears with chestnut mascarpone mousse, defrost the chestnut rice.

Chop the chocolate very finely.

Whip the cream with the vanilla sugar until stiff.

Mix the chocolate with the pear liqueur, mascarpone and chestnut puree and fold into the whipped cream.

Chill for at least two hours.

Peel the pears, cut them in half and remove the core. Steam in a little water with 2 tablespoons sugar until firm to the bite. Drain and let cool.

Arrange pears cut side up on dessert plates and place a scoop of the mousse on top.

Sprinkle the pears with chestnut mascarpone mousse with grated chocolate.
