Instructions:

Cut the fillets into 2cm pieces.

Drizzle with vinegar and infuse for 15 minutes.

Put the vegetables in a saucepan and pour the water.

Add the vinegar, onions and spices.

Bring to the boil.

Add the white wine.

Season with salt and pepper and sugar.

Cover and simmer gently at low temperature for 10 minutes.

Remove from heat and season well one more time.

Put the pieces of herring in a jar and pour the vegetable broth over them.

Leave to infuse for four to five days.

Tip: Always use aromatic spices to refine your dishes!
