For the pickled zucchini with peppers, remove the seeds from the zucchini and peppers, peel the onions and garlic. Mix well salt and 1/4 l herb vinegar with water in a large saucepan or bowl. Add the zucchini, onions, peppers and garlic and mix well. Let stand for 4 – 5 hours and then strain.

Then boil 3/4 l vinegar, sugar, curry and mustard seeds in a large pot and add the strained mixture (zucchini, onions, garlic, peppers). Boil everything for a few minutes and rex it in. You can also put the pickled zucchini with peppers in screw jars, cover with olive oil and seal well.
