Rinse the cutlets, dry them. Season inside and out with salt and season with pepper. Fill each with two slices of pineapple and a slice of cheese. Thread with a wooden skewer. Turn first in flour, then in beaten egg and then in breadcrumbs on the other side. Heat light butter in frying pan. Brown meat on both sides and cook in a good 10 minutes. Caution. Too high temperature will dry out the veal cutlets.
