1. remove the skin from the pineapple with a kitchen knife, cut in half, remove the stem, cut the flesh into small cubes.

Put sugar (about 4 to 5 tablespoons) in a saucepan, add a little water and bring to a boil. Then set aside to cool. If you mix the sugar directly into the punch, it tastes the same, only it clouds a little.

Mix the wine with the Cointreau, sugar syrup, gin and pineapple pieces. Chill. Just before drinking the punch, top up with sparkling wine and bring to the table.
