For the pineapple, cut the pineapple in half lengthwise and cut out the flesh as best you can. Remove the hard core and cut the rest of the flesh into cubes.

Mix this with the rest of the fruit, pour everything into the pineapple halves and pour the sauce on top. Refrigerate the fruit.

Then, for the pineapple, cook the spinach and place it in the middle of the fruit cubes.

For the ginger-honey sauce, mix the olive oil, lemon juice, honey, freshly grated ginger and a pinch of salt and let this stand briefly.
