For the leg of lamb, finely chop one half of the garlic cloves and finely slice the other half. Remove the needles from one garlic branch and chop finely.

Mix the chopped garlic, the chopped rosemary needles, the chili with the crushed pepper and the olive oil and rub it into the lamb and let it sit for at least 1 hour.

Preheat the oven to 150 °C. Heat some clarified butter in a suitable frying pan. Place a slice of lamb, a few slices of garlic and 1 sprig of rosemary in the heated clarified butter and sear on both sides for about 1 minute.

Remove from the pan, place in an ovenproof pan, cover and place in the oven for 15 – 20 minutes. After the meat is removed from the oven, it should rest covered for about 10 minutes before serving.
