For the plum jam from the baking sheet, evenly spread pitted and halved plums on the deep baking sheet (grease pan). Mix sugar and vanilla sugar and sprinkle on top.

Place the baking tray in the middle of the oven. Cook at 200 degrees (gas: level 3, convection oven: 175 degrees for 2 to 2 1/2 hours) until the plums are well thickened.

Stir the plums on the baking tray with a stirring spoon to a puree and fill into hot rinsed jam jars with plum puree from the baking tray.
