Poached Pear with Cinnamon Cream

Instructions:

1. peel, halve and core the pears.

2. Make a syrup by boiling 1/2 liter of water with four tablespoons of sugar, the sliced vanilla beans, lime zest and lime juice. Add the pear halves and continue cooking for about five minutes. Cool in the broth.

Score the pear halves in a fan shape, place in an ovenproof dish and sprinkle with brown sugar. Caramelize the sugar under the heated broiler or in the oven heated to the highest setting.

Whip the cream until semi-stiff, season with sugar and cinnamon. Pour the pear juice through a sieve and add to the pear halves together with the cinnamon cream.
