A recipe for asparagus for gourmets:

1. defrost puff pastry. Rinse asparagus spears, remove peel and chop woody ends. Bring 1/2 liter of lightly salted water to a boil with sugar. Add 1 tbsp. juice of one lemon and butter. Cook the asparagus for 15-20 minutes with the lid on. Drain the asparagus, collect the stock and measure out 200 ml.

Roll out each disc of dough on a little flour (approx. 15 x 25 cm). Cut out perhaps 2 flowers at each end. Roll up asparagus spears in the dough in portions. Brush with beaten egg yolk and garnish with flowers. Place on a baking tray lined with parchment paper. Bake in a hot oven (electric oven: 225 degrees / convection oven: 200 degrees / gas: level 4) for 10- 15 min.

In the meantime, rinse and dry the salmon and cut into 8 pieces. Roast in hot oil for 7-8 min. Season with salt, pepper and a few squirts of juice from a lemon. Keep salmon warm.
