For the polenta pizza, bring the vegetable soup to a boil in a saucepan. Stir in polenta and cook over low heat, stirring constantly, for about 5 minutes.

Remove from heat and let cool slightly, stirring occasionally. Meanwhile, wash tomatoes, wipe dry, cut in half, remove stem ends and cut into narrow wedges.

Drain the mozzarella. Peel young onion and cut into rings. Wash the peppers, pat dry, halve, remove seeds and cut into small pieces.

Mix the cooled polenta with an organic egg and spread on a baking dish ( 20 cm diameter) lined with baking paper, spread smooth.

Spread the tomatoes, bell pepper pieces, green onion and salami on the polenta. Slice the mozzarella and cover the polenta pizza with it.

Bake in a preheated oven at 180 degrees for about 20 minutes until golden brown. Remove from the baking dish and sprinkle with parsley or basil.
