Drain the peaches. Beat egg yolks and sugar until creamy and sugar is dissolved. Add curd cheese and poppy seed cake and stir. Whip the cream until stiff and fold into the curd. Crush the peaches. Fill the poppy seed curd and the peach puree in layers into high dessert glasses. Decorate with lemon balm
