Instructions:

For the poppy seed loin, first separate the eggs. Beat egg whites with whole cane sugar until stiff. Mix egg yolks, soft butter, vanilla sugar and powdered sugar until fluffy. Mix rum, grated poppy seeds and wholemeal spelt flour into the yolk mixture. Gently fold in beaten egg whites.

Spread into a greased and floured loin pan. Bake over medium heat. Let cool. Heat the coconut oil and melt the cooking chocolate in it (not too hot).

Stir in the rum and glaze the poppy seed saddle with it.
