For the porcini à la bordelais, clean and slice the porcini mushrooms. Chop the shallots and garlic cloves. Heat some oil in a pan and sauté the shallots and garlic together with the porcini mushrooms. Add diced and blanched tomatoes once the porcini have taken color. Let the tomatoes boil down briefly, then deglaze with 1/8 liter of dry white wine. Put the lid on the saucepan and simmer the porcini tomato mixture for about 40 minutes on low heat.Before serving, season with fresh tarragon, salt and pepper and serve.
