Rub the pork saddle with salt, pepper, garlic and caraway seeds and leave to soak for a few hours, heat the oil, sear the meat all over, pour water underneath and roast at 200°C for approx. 45 minutes. Pour the gravy over the meat again and again. Remove the meat from the oven, cover with aluminum foil and let it stand. Finely chop the onion and sauté it in the roast residue. Deglaze with beer and let it boil down, add gravy or beef broth and refine with butter. Cut the roast, arrange and pour beer sauce over it.
