For the coffee scented pork tenderloin, season the meat with salt, bell pepper and paprika powder and rub with mustard.

Mix coffee grounds with 3 tablespoons of oil and roll the meat in it, then put everything in a large freezer bag. Leave to marinate in the refrigerator for 2 days. Remove meat from coffee marinade and rinse with cold water, season with salt and pepper. Heat 2 tablespoons of oil in a frying pan and brown meat.

Put it in a baking dish and finish cooking in the oven at 80°C for 1 hour. Deglaze the roasting mixture with white wine and reduce by half. Add espresso and whipped cream and cook until creamy while stirring, season with salt and pepper.

Serve the coffee-scented pork tenderloin with the espresso sauce.
