For the potato pancakes (from raw potatoes), scrape peeled potatoes very finely on a horseradish grater (or with a food processor) directly into a container filled with cold water. Let stand for about 30 minutes. Strain the potatoes and squeeze them well. Collect strained water and let stand briefly. (Potato starch will settle to the bottom of the bowl and remain after the water is drained).

Add eggs, remaining starch and spices to potatoes and mix briefly. Heat a coated pan with lard, shape potatoes with a spoon (or ring mold) into flat, round patties and fry slowly for 8-10 minutes until golden brown. Turn the potato pancakes (from raw potatoes) and fry on the other side for about 3-4 minutes.
