Wild garlic pesto:








Instructions:

Pesto: rinse wild garlic, dry and finely grind with olive oil in a hand blender. Add the pine nuts and grated Parmesan and whisk briefly. Season with salt and pepper.

In the meantime, make the potatoes in their skins in salted water, rinse when cooled, peel and cut into fine slices. Bring the finely chopped shallots with chicken stock and vinegar to a boil and pour over the still warm potatoes form. Carefully fold in the oil with a rubber scraper. Season to taste with salt and freshly ground pepper.

Quarter, core and dice the tomatoes. Add the cubes to the potato salad together with the pesto.
