Poultry Stew with Crab Tails and Goat Cheese

Instructions:

First, remove the shell and intestines from the scampi and cut into bite-sized pieces, as well as the chicken breasts. Then peel the garlic, onion and kohlrabi and cut into thin strips. Halve the cherry tomatoes, pluck the sage and cut it into tender strips.

Sauté the onions, garlic and kohlrabi in olive oil and season. Now add the chicken breast and sage. When the whole thing has a slight color, extinguish with the white wine, fill up with chicken stock and continue cooking at medium heat for about five minutes. Now add the crayfish tails and tomatoes and cook for another five minutes.

Pour the stew through a sieve, add to the stock the grated lemon juice and whisk with the goat cheese. Season everything with salt and olive oil, add the garnish and serve with garden cress.
