Preparation of Caramel – Spun Sugar

Cover surface generously with aluminum foil. Have a baking bowl with cold water ready. Straighten a dry, grease-free brush and spoon. Bring sugar, glucose and water to a boil and caramelize until amber. This will take 13 min over medium gas flame.

During this process, use the wet brush to keep the rim of the pot clean. Once the caramel has turned the right color, dip the saucepan briefly (20 sec) into the baking bowl of cold water. Make sure that no water gets into the inside of the saucepan.

Run dry spoon into the liquid caramel. Grasp the spoon at the upper end, between thumb and forefinger and run the threads with a bobbing motion about 50 cm above the foil.
