Instructions:

For the Pulled Salmon, first cut the potatoes in half, boil until soft and drain.

Fill a pot with water, salt it and put the salmon in it. Bring to a boil and then set aside to steep.

Remove the stalk and seeds from the chili. Pluck the cilantro leaves from the stems and chop finely. Finely chop the pod. Cut the avocado apart, remove the pit and mash the flesh in a bowl together with the lime juice, chili and cilantro. Season to taste with salt and pepper.

Remove the salmon from the broth. Pull apart and serve the Pulled Salmon with avocado dip and the potatoes.
