For the pumpkin dumplings, boil the potatoes in salted water until soft, then peel. Press through the potato press or mash. Then quickly prepare a dough with flour, potato starch, salt and egg and let it rest for about 30 minutes.

In the meantime, chop the onion. Heat some oil in a pan, fry onion and bacon cubes in it. Cut the pumpkin into small cubes and add. Add finely chopped rosemary.

Add salt and pepper. Pour in water and steam for about 10-15 minutes, until the pumpkin is soft and the water has evaporated. Turn off the heat. Chop the cheese and melt it in the remaining warm pan.

While still warm, form 6-7 small balls and let cool on a floured board. Divide the dough into 6-7 pieces as well. Form the dough first into a ball and then press apart into a round disk until there is room for the filling.

Once again, shape the dumplings into a round in your hand. Bring a pot of salted water to a boil and cook the dumplings in it for about 15 minutes, until they float to the top.

Melt the butter in a frying pan and add the parsley. Serve the dumplings with the parsley butter.
