For the pumpkin seed feta egg dish with avocado, chili and smoked salmon, first cut the avocados in half lengthwise and remove the pit. Season with salt, olive oil and lemon juice and sear or grill on both sides.

Cut the feta into small cubes and roughly chop the pumpkin seeds. Mix the egg with a little salt and pepper, cut the salmon into strips.

Heat 2 tablespoons of olive oil in a frying pan. Fry the eggs in it, stirring constantly, until almost set but still nice and creamy. Add the feta, pumpkin seeds and crumbled chili.
