For the quince puree, peel and core the quinces and cut them into pieces as small as possible. Let them lie. The quince pieces will turn brown and this will give the pink color.

Peel and core apples and cut into wedges. Peel the lemon peel thinly in a spiral, then squeeze the lemon first.

Boil quinces in 1/4 liter water and the wine with the lemon juice, the cinnamon stick and 1 tsp sweetener until liquid. After about 15 minutes, add the apple pieces.

When everything is soft, remove the cinnamon stick and, using a blender or mixer, grind the mixture very finely. Serve the quince puree.
