Dice the rabbit fillet, sauté in olive oil, add garlic and shallots, sauté briefly, extinguish with white wine and the demi-glace. Add the leek and finish cooking at a low temperature.

Serving tip: arrange on a bed of freshly sautéed chanterelles. Serve with roasted potatoes.
