For the raspberry foam slices, beat eggs with powdered sugar and vanilla sugar until foamy. Then stir in lemon zest, oil and water. Sift in the flour mixed with baking powder and stir in carefully.

Spread on a small baking tray (25 x 20 cm) or on a large divided tray, spread and bake at 180° C for about 25 minutes.

After cooling, spread with raspberry jam and spread raspberries on top. Mix granulated sugar with 30 g water and reduce to a chain flight (118°) while stirring constantly.

Whip egg whites with sugar and a pinch of salt until stiff. Slowly add the sugar mixture to the mousse and finish whipping.

Spread the mousse over the raspberries and flambe the raspberry foam slices with a flambe (possibly blowtorch).
