Cut chestnuts crosswise, boil in water until soft and peel. Allow to cool briefly and cut into slices as thin as possible. Core and peel apples, also cut into slices and sprinkle with lemon juice to prevent discoloration. Cut celery stalk into thin slices and mix with chestnuts and apples. Mix a marinade of walnut oil and apple cider vinegar, add to the chestnut salad, leave to marinate for about 20 minutes and serve.
