Cut rhubarb into 1 cm long pieces, steam with lemon zest and vanilla in a little water for about 5 minutes at low temperature until soft and let cool.

Mash bananas, whip with honey until creamy and fold into rhubarb.

Serve compote sprinkled with toasted almond flakes.
