Rhubarb Cream on Strawberry-Honey Sauce

Instructions:

Rhubarb clean, rinse, remove the peel and cut into pieces. Mix with sugar and stew gently at low temperature with the lid closed until soft.

Soak gelatine in cold water. Squeeze gelatin and fold into hot rhubarb. Then cool.

Stir in the stiff whipped cream just before it gels.

Rinse small ramekins with cold water, pour in the rhubarb cream and refrigerate.

Rinse strawberries, clean and cut into pieces, crush with powdered sugar and honey.

Serve: Put some strawberry sauce in the center of the plate, place the rhubarb cream on top and sprinkle with chopped pistachios.
