For the rice with vegetable mallow fruits melt one tablespoon of margarine in a saucepan and sweat the rice, salt and carrot powder.

Pour double the amount of water over the rice and add turmeric, bring to the boil once, turn down to the lowest heat and cover for about 20 min.

After 15 min, melt a tbsp of margarine in another pot, toss the vegetable mallow fruit capsules briefly in the hot margarine, they turn a very nice bright green and stay fine crisp.

Then set aside 1 tbsp. of the capsules as decoration, mix the rest into the rice together with the Parmesan.
