Remove the peel from the asparagus spears only at the bottom end, trim the hard ends. Tie asparagus spears in batches and make in salted water, seasoned with a tiny bit of sugar and a flake of butter, 10 -15 min. Rinse asparagus spears in cold water, drain and set aside.

Sauté shallots in a frying pan with butter, add asparagus spears and fry them all around, extinguish with clear soup and boil them until they are completely cooked.

Sprinkle asparagus with chervil and place in a buttered baking dish.

Cut the goat cheese into small slices and spread evenly with the bread crumbs on the asparagus. Place the gratin dish under the grill snake and gratinate the cheese until golden brown. Sprinkle with coarse pepper before serving.

It goes well with herb flädle and cooked, peeled potatoes.
