Roasted Pork with Vegetable Couscous and Dip

Roasted pork: Cut the pork into cubes (bite-sized pieces), marinate with 3 tbsp. olive oil, salt, pepper and oregano, infuse for a few minutes. In the meantime, prepare the vegetable couscous! Fry the marinated meat in a hot frying pan until crispy, extinguish with the juice of the lemon and finish stewing.

Vegetable couscous: Soak the dried mushrooms in warm water, then squeeze and cut into noodles. Cut the onion, parika and leek as well. Add water to the couscous. Sauté the finely chopped vegetables in 2 tbsp. olive oil, season a little with salt and pepper, then fold in the fully swollen couscous and keep warm.

Dip: Mix the sour cream (or yogurt) with a little salt, a little lemon juice, 1 tbsp oregano, garlic and chives, season to taste.

Our tip: Fresh chives are much more aromatic than dried ones!
