For the roasted turkey breast on vegetable-egg rice, first steam the rice. In the meantime, peel and coarsely grate the carrots. Cut about 2 handfuls of leek rings and finely dice the bell bell pepper.

In a large pan, sauté the leeks in a little oil and then add the peas and let them steam a little. Gradually add the carrots and peppers.

Cover the pan with a lid and let it steam until the rice is ready. Then fold the rice into the vegetables, add the eggs and season with salt and pepper.

Season the turkey breasts with salt and pepper and brown them in an extra pan. Serve the vegetable-egg rice with the turkey breast and enjoy.
