Preparation time: 5-6 hours

Peel the chestnuts, finely chop the liver, soak the white bread crumbs in the milk for a few minutes.

Mix all the stuffing ingredients.

Stuff the turkey tightly with them and close it with a meat skewer.

Melt the butter.

Place the turkey in a deep roasting pan, coat with the butter.

Put the poultry fat around it.

Cover everything with foil and roast in the stove at medium low temperature: calculate 20-25 min. cooking time for each half kilo.

After half the cooking time, ladle the turkey with the resulting sauce and season with salt and pepper.

15 minutes before the end of the cooking time, baste the turkey again. Remove the turkey.

Gravy:

Carefully pour off excess fat. Fold in the 2 cups of clear soup and the currant jelly. Season to taste. Cook vigorously to make a creamy not too runny gravy.
