Instructions:

Finely grind the chili with garlic and sea salt in a mortar, then mix intensively with the cooked and strained potato.

Stir in the olive oil as for a mayonnaise and then fold in the crème fraîche.

Season to taste with lemon juice, salt, pepper and cayenne pepper.
