For the Sacher cubes, cream the room-warm butter with the powdered sugar until fluffy, gradually stir in the yolks, add a little salt.

Heat the chocolate in a bain-marie and carefully fold into the yolk mixture. Whip the egg whites and beat with the sugar until stiff. Fold the beaten egg whites alternately with the flour into the chocolate mixture.

Spread the dough on a baking tray covered with baking paper and bake in a preheated oven at 170 °C for about 40 minutes. Allow to cool.

Divide the cake into thirds, spread each third with apricot jam, place the pieces on top of each other. Cut cubes of the same size. Melt the chocolate glaze in a bain-marie and coat the cubes with it.
