For the salmon in puff pastry, defrost the puff pastry. Preheat the oven to 180 degrees. Rinse the salmon fillet and pat dry. Place the puff pastry slices next to each other, overlap by about 1 cm and press down.

Spread 1 tablespoon wild garlic pesto on the puff pastry, leaving the edges free. Place the salmon fillet on top, cut the cherry tomatoes in half and place on top of the salmon fillet. Cover with 2 slices of puff pastry and close the package. It is best to press the edges in with a fork.

Beat the egg and brush the puff pastry with it, then sprinkle with sesame seeds. Place the packet on a baking tray lined with baking paper and bake the salmon in the puff pastry for approx. 20-25 minutes in a preheated oven at 180 degrees until golden brown.
