For the salmon in salt crust, first rinse the salmon under cold running water with care. Sprinkle the inside of the fish with the juice of one lemon and season with salt and pepper. Place rinsed kitchen herbs inside the fish.

Sprinkle one kilogram of sea salt on a tray and place the fish on it. Mix the remaining salt with egg white and 5 tablespoons of cold water. Spread the mixture evenly on and around the fish, pressing a little smooth. Cook in the oven (E-kitchen stove 175 °C , gas stove level 2) for 40-45 minutes.

Beat heartily on the salt crust until it cracks. Then carefully lift off the crust and carefully remove the remaining salt. Serve the salmon in salt crust.
