For the salmon salad, wash the lettuce and let it drain. Wash and finely slice mushrooms and sprinkle with the juice of one lemon.

Peel the shallots and chop finely. Mix vinegar with tarragon, salt, pepper, safflower oil and shallot cubes. Mix mushrooms and lettuce leaves with salad dressing and arrange on plates.

Place two slices of salmon on each of the vegetables and serve the salmon salad sprinkled with chopped parsley.
