For the salmon tartare in lime marinade, thoroughly remove the bones and fat from the salmon and cut into very fine cubes with a sharp knife.

Grate the lime zest and mix it with the salmon cubes together with half of the lime juice and the olive oil. Season with salt and pepper and place in the refrigerator.

Mix the crème fraîche with the remaining lime juice and salt and also put in the refrigerator.

Roughly grate the potatoes and squeeze the water well with your hands. Mix with salt and finely chopped onion cubes and portion into small patties. Fry out crispy little rostis in a pan with hot clarified butter.

Mix salmon tartar with chive rolls.

Serve salmon tartare in lime marinade with crème fraîche and hash browns.
