For the salmon tartare with avocado on lime dip, finely dice the salmon and spring onions and mix together. Mix the juice of one lime, olive oil, honey, fish sauce and soy sauce and add to the fish.

Season with salt and pepper and the ground coriander and stir in the finely chopped chili pepper. Puree the avoacdos and season with lime juice and salt and pepper.

Mix the lime zest with the sour cream and season with salt and pepper as well. Arrange the salmon tartare nicely in the middle of a plate and layer the avocado puree on top, adding the lime cream as the third layer.

Garnish with chili and cilantro. Serve with baguette.
