Heat the oil in a frying pan. Sauté the onion for 3 min, stirring frequently, until translucent. Add the fish with the bay leaves and roast for 10 min until delicately browned, mixing a few times. Remove the bay leaves. Add the parsley, salt and just under 1/2 liter of water. Saute the fish over low heat with the lid on for half an hour, adding more water as needed to keep it from drying out.

Remove the saute pan from the kitchen stove, cool the fish a tiny bit, and debone it accurately. Strain the fish and onion over a saucepan. Add enough of the stewing stock to make a sauce that is not too thick.

Heat the sauce repeatedly and mix thoroughly with the freshly cooked, well drained pasta.
