Chop the parsley, capers, an anchovy fillet, garlic clove, onion (wash, provided that it is not out of the oil) and the pickled cucumber together with the softened and squeezed breadcrumbs as finely as possible (hand mixer). Add a little salt and pepper and whisk again until the mixture is smooth. Then, continuing to mix, gradually add the olive oil (as for mayo) and finish with the vinegar. Excellent with boiled meat and fish, but also with steamed broccoli or cauliflower.
