For the sauerkraut quiche, quickly knead flour, 1 egg, 1/2 tsp salt and butter into a dough. Let the dough rest in the refrigerator for about 1/2 hour. Grease a springform pan and place the rolled out dough in it.

Press a 2 cm high rim and prick a few times with a fork. Bake at 180 °C for about 8 minutes.

In the meantime, finely chop the onion and fry in oil until translucent, add the bacon cubes and fry. Add the washed and finely chopped sauerkraut and steam on low heat for 10 minutes.

Season with salt and pepper. Spread the sauerkraut and bacon mixture on the pastry base. Whisk the remaining eggs with creme fraiche and spread over the sauerkraut.

Bake the sauerkraut quiche for about 30 minutes at 180 °C.
