Savoy Cabbage Soup with Curry

Clean cabbage, cut into quarters, remove the stalk. Peel the potatoes and cut into cubes. Sauté potatoes and 2/3 of the savoy cabbage strips in butter.

Add crumbled herb and curry to the vegetables, sauté briefly. Pour in clear soup and simmer for 20 minutes with lid on. Blend soup, add 100 ml whipped cream. Roast sunflower seeds and remaining cabbage in hot oil for 5 minutes while stirring.

Whip 100 ml whipping cream until stiff, stir into soup, season with salt, season with pepper. Add sunflower seeds and cabbage.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
