Coarsely dice the leftover roast and chop in a food processor or weigh very finely. Finely chop onion and cleaned mushrooms. First fry the onion in clarified butter, then add the mushrooms and fry briefly. Add meat mixture, roast and season with salt, pepper and marjoram. Stir in sour cream and let everything boil down to a creamy consistency. In the meantime, fry the eggs in a little butter in a pan to make fried eggs. Toast brown bread in a little butter or in a Teflon pan until crispy. Spread the finished meat mixture on the brown bread toasts, place the fried eggs on top and finally season with salt and pepper and sprinkle with chopped chives.
