Seitan is a vegetarian meat substitute made from wheat protein. It was invented thousands of years ago in Asia for meatless cooking.

Food starch and the gluten of the protein are extracted separately from whole wheat.

The gluten is cooked in a stock of water, soy sauce and spices. The ongoing kneading of the wheat leaches starch and continuously increases the protein content. The result is a meat-like consistency.

The “meat” juice that results can be used as a sauce base for vegetarian juice cutlets.

But seitan can also be used to make meat-like schnitzels in the classic breaded and fried form.
