For the semolina dumplings, beat the butter until light and fluffy, add the egg and stir until the mixture binds. Fold in the semolina and season the mixture with salt and nutmeg (freshly grated). Allow the semolina mixture to swell at room temperature for at least an hour.

In a saucepan, bring salted water to a boil. Cut out even dumplings from the semolina mixture with two damp teaspoons, dipping the spoons in hot water from time to time. Cook the semolina dumplings in the salted water just below boiling point for about fifteen minutes. Lift out with a slotted spoon.
